Welcome to RootsChat, a lot more records have come online since sueclog posted back in 2007
Here is John's birth cert which gives the address where they were living at the time.

My cousin helped me with family information. My 2nd great grandmother is Bridget Sheridan, and my cousin was the one who told me her mother and father were John Sheridan and Ann Winters. Further research and help from someone else pointed me here, where someone posted their marriage date.
Thank you for the birth certificate link!!! I'm new to researching and having trouble finding things and ancestors!

First lesson is to always know where the evidence is and find it so you can check it yourself. That's what I did by finding John's birth, I also looked for his Baptisim which is in St.Mary's parish

The address Mary's St. is the same as on John's but this time the father John is down as a labourer on John's he's a Railway Porter.
It's also worth noting the surname is spelt with two r, this may be down to the registrar, as the priest only uses one on the baptisms.

So I can use these sites(the links above) to possibly find the rest of the children's birth/baptisms. If they are all in the same parish, could I assume that's the parish they were married in and search for their marriage certificate as well? Thank you so much for your help!!! I had a busy day to day so wasn't here much. The rest of the children won't have birth certs as civil registration only started in 1864, but hopefully all their baptisms will be in St.Mary's Parish and it is just a matter of finding them there.

The marriage also won't have a civil cert, (assuming both parents are RC and the marriage took place in an RC church) the marriage is where you could come unstuck, marriages on that site for St.Mary's don't start until 1870, and they don't seem to be anywhere else

but a marriage usually took place in the brides parish so if Ann is from a different parish it may be possible to find it.
Can you ask your cousin if the marriage year is assumed because of the year of the first child or was a record of it found.

Also the first child is born 1858 and the last 1866 which is less than 10 years, women often but by no means always had children over a 20ish year period so unless a marriage record was found there is always the possibility there are more children also the family could have started out some where else, keep in mind we don't know John and Ann's age when they married.

I did find Francis's and Rose Ann's, also Catherine's. I can't seem to find Mary's baptism record...wondering if the date of birth I have (Sept. 13, 1859) is incorrect. I just looked at the 1901 census and her age is 44 (listed with her father and niece...) that would put year of birth at 1857, making her the oldest child. Couldn't find her record for that year, so went back to 1856 and still no record. I wonder if she was baptized in a different parish? I will see if I can figure out what parish Anne was from. I will ask my cousin about the marriage!
