Surprisingly, found a Banns notice for John BROOKS and Elizabeth MORRIS for 26th Sept. 1784, followed, over a year later by their eventual marriage:
12th October 1785 John BROOKS bachelor and Elizabeth MORRIS spinster, both of this parish (Ely St Mary's).
The witnesses were Martha Longhorn and Margret (sic) Lawrence, but both were witnesses quite frequently at this time, so may not have had any particular connection to the married couple through family or friendship...
Thereafter follow three other baptisms to the happy couple (apart from Catherine)
Matthew on 17th July 1786
John (surname given as BROOK) on 4th October 1787
and Matthew again on 22nd September 1789
This suggests that the firstborn Matthew perhaps died, but there was no sign of his burial.  The only burial  for a member of the BROOKS family was on 24th December 1792 for Mary BROOKS, daughter of John and Sarah...

In case I'm not being very clear, the 1791 Baptism for Catherine BROOKS was indeed in the Ely St Mary's PR's - it's just that I didn't write it down again with the other 3 baptisms I found...
