Thank you so much for taking time to look for John and Jane Ellis.

Mary Turner (nee Ellis) death registration form reports her
birth date as being June 11, 1868, Wales.

Parents:  John Ellis  (Wales) and Jane Broad (Wales)

You  mentioned only seeing two baptisms 1861 and 1863.
Could they have had more children after 1863 with a child
baptized Mary Ellis?

Mary Turner (nee Ellis) husband Edward Oliver Turner was baptized
Nov. 26, 1864 in Minera (Wrexham Registration Area).

Edward's family lived in Minera for many years and also in Ruabon, Denbighshire. 

Since only country of birth was mentioned on death registration form,
I cannot be certain you will find Mary Ellis (born June 11, 1868) in Wrexham records.

Since my great grandmother, Hannah Griffiths was born in Minera and the
Turner family lived in Minera and Ruabon, I would lean towards Wrexham as
being the district to investigate records!
