Not just in the middle ages Guy, certainly in farming areas well into the 19th century I believe.

I just found the addy. it is http://www.genealogy.gc.ca/06/06_e.html

There are 51 entries.  It helps to have a regiment number, or Canadian address, or some kind of personal information as you can click on each name for some information.

Here's the link for the Library and Archives Canada (LAC) database for the First World War personnel records.  LAC has digitized the entire collection of the personnel files.  Not only can you find the attestation papers but there will/should also be a PDF link to the entire file (look for "Digitized service file - PDF format").

I have no idea if it is already there but I just added it under the First World War board.
