This looks confusing, in 1841 Martha (no marital status given) has Alfred 10 and Alice 8 living with her,

I found this extracted baptism on the IGI,
Alice ELLISON
Birth: 07 Dec 1832
Christening: 07 Apr 1833 Wigan
Father: John ELLISON
Mother: Martha
so it appears Alfred could also be the son of John and Martha
but...
In 1851 widow Martha has Alfred 19 and Sarah 6 with her,

There are two Sarah ELLISONs born in Wigan district at abouth the right time,

I think the former could be the daugther of 'your' Martha as I found the following extracted entries on the IGI,

Birth: 06 May 1845
Christening: 01 Jun 1845 Wigan
Father: William ELLISON
Mother: Martha
Sarah ELLISON
Birth: 05 NOV 1845
Christening: 17 NOV 1845 Wigan
Father: John ELLISON
Mother: Sarah
So getting the first birth certificate should give the Martha's maiden name and whether she was married to John or William, or show if she was fibbing about being a widow and was really a single woman.
Maybe Martha ?? married John ELLISON then after he died she married William ELLISON. There are alot of ELLISONs in the area
