There are two entries, one by the enumerator, and the other by the clerk in the census office extracting occupations.

Could be Sugar Worker  :-\  with Sweet written over the top.

A Sugar Boiler, aka sweet boiler, for sugar confectionery, was responsible for the mixing, boiling and colouring of boiled sugar sweets.
