Unfortunately, much of the Beckley Census is so faint as to be unreadable. I've had a stab, though.
In what looks like it might be King's Bank (having referred to a map):

In the next household, Old Oak, there is a family with what appears to be the same surname:
Possibly William, 35, Ag. Lab.
Jane, 35
Illegible male, 13
Frances(?), 5
Fred, 4
If you want to follow the above on a map, the enumerator was following the turnpike road (I assume the present A268) leading from Rye towards London. The next household along from the last lot of possible Saunters was G. Knell cottage and then a number of households identified as Great Knell.
The next enumerator moved from Four Oaks into the village.
In the village there is a family whose surname appears to be Santer:
James, 35, Ag. Lab.
Hannah, 25
Charlotte, 6
Thomas, 2
Herbert, 9 months
All the above appeared in the first two sections of the Census for Beckley which was very faint, and so I cannot swear to the above being accurate. Some parts were so faint as to appear blank - and so I may have missed Saunters. The remaining sections were readable, on the whole (some pages were very faint at the bottom), but I didn't spot any Saunters or similar names.
There should be more, judging by the 1881 Census (ie. John and Serena Saunter who were born in Beckley in 1805 and 1807, respectively, and were still there in 1881). As some Saunters were, in 1881, in Sowdens cottage, I looked at Brede/Broad Oak/Udimore where Sowdens Farm was located because Sowden's Bridge was one of the borders of Beckley recorded in the Census. I could only find the inhabitants of Sowden's Farm and they were Larkins.
I've looked at much of Rye, to no avail. I haven't searched outside the "town walls" or the Rye Harbour area, though.
