So, if they used the traditional naming convention, Catherine's parents would be a John and Elisabeth

This is not definite but a good possible.

Do you have them on the 1841 or later censuses to get an idea of her age?

Catherine Younger died 1858, Dunnet, aged 65.

Scotlands People give her other surname as Clyne and her mother's name as Manson, so I think the 1789 bpt that I found is correct.

How do you mean 'not pin her down' ?

I've given you a baptism, her children, the 1851 census and her death (which gives her parents' names). There's not much more to pin down really is there as you have her marriage
