Because she wasn't Malvinia Christmas - she was Malvinia Summons - as per her birth cert.  John Christmas was not her father

Unless the enumerator was specifically told that a child had a different surname to the head of the household - the assumption was they were all the one family

She married as Malvina Summons/Simmons and presumably her fathers name is shown as Edward on her marriage cert

And Margaret was a witness to the April 12 1857 marriage of Ann Elizabeth Rudler to Edward Dunne.  Richard Rudler is again listed as a pastry cook (typing this is making me very hungry!), and Edward is a widower with father being Patrick Dunne, shipwright
