Rose family from Bradninch Devon

Hello
I wonder if anyone can help me I am looking for an Edwin Rose (my GGG grandfather) who was born in abt 1805 in Bradninch he later moved to Bristol with his wife Ann ? who was also born in Bradninch I would love to know Anne's surname and their marriage dates.

There's an Edwin Rose on the 1871 Census, age 33 (born c. 1838), born Bristol, parents Edwin and Ann, both born Bradninch.

FindMyPast has the birth registration of an Edwin Rose, March Qtr 1838, reg dist Bedminster,  vol 11 page 55 - mother's maiden name Holden.

There's a 3yr old Edwin Rose on the '41 Census - ref HO107 376  44 29.

In the same household is an Ann Rose, age 35, NOT born in County (Somerset). In the same household is a Henry Rose, 35, paper maker, NOT born in County (Somerset).

Intrigued to note Henry is a papermaker - wasn't Edwin a Stationer on the '71 Census.

A Henry Rose married an Ann Holdin, both of the Parish, 18 Mar 1827, St. George, Exeter,

You can track Henry and Ann in 1851 and 1861 but in '71 there's a given name change to head of household?
