I am also really curious about that occupation of John Hennessy, George's father. The second word I feel is "Maker".

Yes with a squashed up 's'. Looks a bit like Mater.

Here is a definition 'The officer who superintends the barracks of soldiers.'

When I first saw it, being hungry at the time, I read 'bread maker.'
