Its getting harder to track them in Ireland the further back I go

Sadly that's how it is for everyone, registration of births and deaths didn't start until 1864 and the Certs aren't as detailed as in Scotland.
Were they Church of Ireland?

I'm not sure as its an area of the family I have only just discovered.

Still busy tracking down what paperwork and photos my family might have that will shed some light on things.

According to the register entry it was United Church of England & Ireland

Yes there is a St.Canice COI as well in Kilkenny, you can see what records RootsIreland have here
