I have been using Word 10 for some time now. Why do they keep deleting the best things when they 'Up-grade (?)' their programmes?

Good question, if it works, and  everyone is happy with it , why mess about with it. Perhaps they are in league with the publishers of the "Dummies"  books.

Have you changed the paragraph space settings?  These are separate from the line space settings.  I've done a screen grab of the dialogue box in my Word (it's for Mac, so it might look different from yours - and sorry it's greyed out, a symptom of not being able to do "Print Screen" in Mac) to show you that the paragraph Spacing should be 0 to get the setup you want.  However, then to get spaces between paragraphs, you'll have to put in an extra line/return, which is a pukkah formatting no-no ;)

The other thing on Word 2007 which makes the lines have spaces between, rather than just normal type is on the Home page, on the right hand side, there is a style window.  The default gives 1.5 or double line spacing, but you can find one that states No Spacing, which means you only get extra spacing if you choose it by tapping the return key twice or more.  I've now got my Word set up for No Spacing and managed over time to delete the other options.  Sometimes, however, it defaults and then I have to click on the No Spacing Box.

Muddled explanation, see attached for the box I mean.

Or, Cmd-Shift-4 to drag a selection?

I am aware of those but I am on a laptop without a number pad so perhaps that has something to do with the fact that they don't work.

Also, if you'd left out the "er..." and the wonky face I'd have appreciated your message a lot more.
