To have been listed in the electoral rolls, Eileen junior must have been at least 21, so born about 1917 or 1918 if 1939 is the only one where she is included. I cant see one with a mother Smyth, but there is this one:

I wonder if it was Eileen Smyth's second marriage and her maiden name was Pearson?

Eileen  jnr   appears on the 1938 electoral  roll with John   and  Eileen Snr ,  but as ellen   margaret  ,   though  that   could be a typing error 

 I  can't see  a Smyth/ Pearson  marriage  ,   but then again   it could be  down  as Smith !

There is marriage 1915 Lambeth:

  Ernest Gray to Matilda D Pearson Lambeth 1D 401

which is probably the parents of the 1917 Eileen M Gray birth.

There were a couple of Gray/Smith marriages between 1915 & 1920 in the Romford area:

1915  Robert Gray to a Marion Smith in Romford

1918 Arthur Gray to a Smith in Edmonton

Eileen M Gray continues to be on the electoral register alone at 97 Queen Alexandra Mansions until at least the early 1950s - suggests this is the elder and she is indeed now widowed.

Last seen 1945, with Eileen. Not sure about where she is in 1946 (the indexing for street addresses is pretty rubbish on the resource I'm using), but no John in 1947

One of the Eileen M Grays marries a Robert Leahy in Q4 1953, Pancras district
