Certainly won't give up but I am no expert on Irish genealogy, my great grandmother's origins are still a mystery to me after 10 years of searching. :(

I am sure there will be others along to take a look at this later.

One sure way of finding out Bridget's maiden name is to find a birth registration for either Margaret, Thomas or Sarah and buy the certificate. I thought Margaret's would be the easiest to find on FreeBMD and just pop up but is proving a bit more difficult than that.

I still can't see a birth reg for Margaret but there is this one for a Thomas registration district Wolverhampton, which includes Willenhall.  There are two others but they both have middle names.

Births Jun 1/4 1854   
Thomas Morgan Wolverhampton vol 6b page 389

Certificates can be ordered from here http://www.gro.gov.uk/gro/content/certificates/default.asp
and you can specify you only want it if the parents' names are John and Bridget. That way they won't issue it and won't charge you.

Which spelling of Dickinson would you suggest I use, I can't find William - who I may think was called William Wench Dickinson on any Census with different spelling. Plus, how on earth are you finding all these records so quickly?

I am using ancestry for the census and FreeBMD for the birth and marriage records. Freecen and Freereg may have the records if you don't have access to ancestry. The 1881 census is free on all sites including familysearch.org
Try using wild  cards for names if the site you are using allows eg Dick*ns*n or just Dick* That way you should get all variations of the name.
when looking for William don't use his middle name just first and last names, date of birth +/- 2 and county.

Having taken a closer look at the 1871 census i think William's middle name is Henry and this is a possible birth registration for him
