Susan Harriet Everett information please

I am trying to find out information about my great grandmothers family.
She was born Susan Harriet Mathews (m. Everett) on 18.6.1888 in Southampton St, London. Her mother was Susan Renshaw born 1864.
The birth certificate has father Unknown, oral history is muddled and now mostly lost in time.
I would love to know more.
There are further connection to London where she worked in Peter Robinsons (to become Selfridges) as a staff cook, also Coggeshall in Essex and the Rozier family seem to be close or possibly connected.
I'd be grateful for help, suggestions or any leads at all.

Birth reg seems to be as Susan Harriet Renshaw (not Mathews), Sep qtr 1888 Pancras 1b 32.

Is the relevant marriage Susan H Matthews to Edgar G Everett, Dec qtr 1915 Braintree?

If so, have you traced how and when the Matthews surname came into the picture?

I can't see her in 1901 under either name.

Mum may be a bit younger than thought and still in London in service in 1891, 22 b Otford Kent.

Poss birth as Susan Katherine Renshaw in Sevenoaks Sep qtr 1868 and marriage Sep qtr 1900 Sevenoaks to Alfred Angold or Henry Robert Davidson (other bride Elizabeth Hollands).

Then poss death as Susan Katherine Davidson alternatively Susannah Catherine Davidson aged 39, Dec qtr 1907 Kensington.

So how does she get the Matthews name, doesn't look as if it was a stepfather's name?
