What does this read as

 This occupation  is from 1891 Toxteth. Liverpool. It`s quite clear but what is it ?

In other records he is on the docks.
1881 dock porter
1901 general warehouse porter

Late at night here, in NSW Australia, but to me, at first glance,

"Meat Taken Meter" ..... as though he records the meat that has been taken.....

Looking forward to reading the actual transcription in around ten hours from now.

I'm not sure that the first letter is an M, it isn't the same as the M in Meter. Looks more like an N ie Neat, but it doesn't make any sense!

Nail? Or could begin with a W - i dont have access to the census so have nothing to compare the letters with.
Could it be weight spelt as wait?

Would need to compare with other letters on the page I would think  :-\

Could the middle word be Salter ?

Definitely starts with a W then Taker Meter.  Could be a mispelling of Weight  :-\

The last word is not as dark as first two.

The last word could have been added by a clerk in the census office categorising occupations.
