This isn`t much help finding Joseph but, I forgot to mention that living at Barnes Green, Harpurhey on the 1841 census were:

John Holland, 75, Weaver, born in county
Sarah Holland 60, not born in county
HO107/579/2 folio 5 page 2

ages rounded down

I think that John died in 1842 aged 78 and Sarah died in 1847 aged 68.
both are buried in St. Peters Blackley

There was also an Ann Hollland servant aged 15 on HO107/579/2 folio 18 page 1 .  The address was also Barnes Green.  I suspect she was the Ann Holland aged 27 born Moston on the 1851 census.   

I wonder if John and Sarah were Joseph`s grandparents?

I now have a copy of the certificate of daughter Sarah Jane Holland born 1857 at Back Windsor Salford, her mother is Mary formerly Oliver. I cannot find a marriage for Joseph and a Mary Oliver, only a Mary Davis 1855 Liverpool, it had the usual reference no's. I sent away for this just in case and my money was refunded saying they never married but why has it reference no's. Could this be a mistake and infact it could be Mary Oliver.

Garrad (Suffolk, Essex, Somerset), Crocker (Somerset), Vanstone (Devon, Jersey), Sims (Wiltshire), Bridger (Kent)
