where do i start looking for relatives that were adopted out?

In which country?
In England & Wales, Legal Adoptions only came into force in 1927.
If it's after that date, then you need to see the Adoptions Contact Register.

Before that date, many adoptions were informal, and not much paperwork was kept.
Garrad (Suffolk, Essex, Somerset), Crocker (Somerset), Vanstone (Devon, Jersey), Sims (Wiltshire), Bridger (Kent)
