French Polisher / Undertaker

How likely do you think it is that a French polisher in 1871/81 becomes an undetaker in later censuses in London please?

Was he an undertaker or worked for an undertaker? French polishers were always employed to finish coffins.

Quite possible, in 1851 my 4x great grandfather was a tailor sewing shrouds, next census he is an undertaker.
