If Elizabeth did not sign the marriage register and just put a cross then you are relying on how the clergy interpreted what she said her name was, also taking into account local accents.

What about naming patterns of their children?
Do you know the name of John’s mother? His father was George

From 1851 census Pickering childrens names
 George
 Mary Ann (she might have been named after either mother)
 Elizabeth

From 1861c
 John Thomas
 William

from 1871c
 Abraham
 Hannah (she might have been named after either mother)

Looking at 1841 census, living at harrington Whitehaven, Cumberland, George Newton 75 coal miner, Mary Shiplow 40 labourer, Elizabeth Shiplow 13 and John Shiplow 11. George b Scotland, others in county.

Mary NEWTON married Martin SHIPLEY in 1818 (FamilySearch) so that would appear to be the wrong family.  :-\

John Pickering's Mother was Elizabeth
There are a lot of Elizabeth's, Mary's, George's, William's, John's, Thomas' etc throughout

One of John and Elizabeth's children was Abraham, which is my Great Great Grandad.

Have you checked Wigton (and surrounding parishes) for a christening for Elizabeth?

I see you cone from "up north" so well worth a visit to the relevant Record Office for a days hunting. Hopefully any siblings can be found too, giving both the mother's name, and an idea as to when Abraham and x may have married. Burials for Abraham and x too, maybe.
Of course, we don't know when she moved to Durham, whether when little with her family, or later.

Luckily I am near to Durham. My Gran was the Pickering and did write down a lot, I even have my GG Grandad's original birth certificate.

Nobody has went as far back as I've started though so I'm going to need to visit somewhere.

I do have an old book about Houghton Le Spring which was my Gran's and there is a picture of my GG Grandad in it, plus a picture of where they lived, it mentions different families of old Houghton Le Spring so I might see if any Swinhow's are in there, if it goes that far back.

good, so we've eliminated that one. I did wonder if the widowed Mary and children were living with her father. A pity the 41 doesn't give relationships
