Southampton or Winchester Assizes - 1829 Court Records

Can anyone tell me if there are 'actual' court records for the year 1829 at the Southampton or Winchester Assizes, that can be accessed.  (I've found records that show that he was tried at Southampton Assizes and Winchester Assizes - not sure which one is correct.

I have an ancestor, George Street, who was tried at either the Southampton or Winchester Assizes on 2 March 1829.  He was found guilty and sentenced to 7 years transportation, for stealing fowls.  George was 19 years of age at the time of his sentence.  George was transported on 20 May 1829, on the vessel "Norfolk", and arrived Australia (Sydney) on 27 August 1829.

If the records can be accessed, how would I do that?

I would appreciate any help that anyone can offer.

Thank you so very much for the information you gave me - your assistance is much appreciated.  I've also been trying to find George Street's birth and had found two possible George's.  Now that I know he was in the Romsey area I can look further at the baptism of a George Street of Romsey.
