Perhaps the above details may help you to find them on the 1911.

On find my past 1911 he is down as George Albert and mother's name mis-transcribed as Merced instead of Maud!

I have realised that George Albert Humphreys was born in 1891 not 1901 as stated on the 1939 household register on findmypast.  Not sure how much difference this makes to his parents names?

It makes a great deal of difference, born ten years earlier than originally stated.

Where did your information about George come from?  You may need to get his marriage certificate assuming that you have found the correct marriage, to get his father's name.

Have you checked the actual image to see if it's 1891 or 1901? Or are you going by the transcription?

Yes the 1939 household states that George Albert Humphreys was born 1891 and his wife Doris M was born May 4th 1904.
