All I have for Frederick was that he was married in Islington but I dont have a birth certificate or his birth place.

Just to clarify is his wife Charlotte or Caroline? 

The 1881 Islington marriage is to Caroline Knight.

There is a family tree with his birthplace as Holloway London and an 1891 census with wife as Carrie plus children

does that sound like the right family?

Holoway London is definitely in the right sort of area.

That definitely looks like the right family from the Children you have mentioned.

Well I think it's right although the ages for parents are wrong in 1891. 

Birth for daughter Caroline Elizabeth in Dec 1889 Poplar has mothers maiden name Knight.
Sadly she may have died young as there is a death Caroline Elizabeth Baker Sep 1891 Poplar age 2.

The oldest 2 children Frederick and Harry have birthplace Islington and the 3 younger children have Bromley.

Think I have Caroline Knight in 1881 as a servant in Lambeth age 21 born Ongar Essex. 

Could be this birth

Sep 1860 Ongar
Mothers maiden name COLE

inching backwards slowly albeit not with Frederick!

She is with parents David and Sarah in 1861/1871.

Marriage Jun 1852 Ongar has a David Knight Sarah DOE which isn't COLE but could have been mistranscribed one or the other.

I have just looked about obtaining a birth certificate for Frederick and the details they have are the correct birthdate and born in Islington..

Mothers maiden name Layton

1861 has a Frederick Baker age 1 1/2 born Islington with a

Thomas Southall 41
Emma Southall 33

no relationship is given for Frederick to the Southalls

If that is him he is kind of on his own in 1871 too - age 12 visitor to Whitbread family.
So he doesn't seem to be with parents at all  :(
