it appears that 1841 age is correct, 1851 age is not.

So was Thomas aged 60 in 1851 or not, and when/where did he die?

No. Thomas should be aged 70 in 1851. My info indicates that he was baptised at Llanfair Kilgeddin, Monmouthshire 5 May 1781

No death date found for Thomas.  My information suggests that he is son of John Parrott (baptised at Llantilio Pertholey, Monmouthshire 10 Feb 1751) and possibly Joan Thomas (married at Cymyoy, Monmouths 17 Dec 1773).  Still cannot find any other children for John and Joan Perrott.

other baptisms to John & Joan Perrot
 in Llanfihangel Crucorney
John bp 10 Jun 1774
Joan bp 27 April 1777 & buried 27 Oct 1777
Abel bp 4 Dec 1778
in Goytre
James bp 9 Feb 1784, John noted as turner as he was on the baptism for Thomas

I think the more likely baptism for John is the one 26 Feb 1748/9 son of Abel in Cwmyoy which would make the Abel witnessing the marriage his brother.
Possible burial for John aged 77 8 Jun 1826 in Llanfihangel Crucorney, although is a marriage in Raglan 10 May 1788 of William Rosser widower and Joan Perrott widow.

I agree, it seems that John Perrot died between 1784 (birth of son James) and 1788 (remarriage of widow Joan).

John (b at Cymyoy 1748-9) is son of Abel Perrott and Ann Jones (of Mamhilad), married at Trevithin 16 May 1746. John's siblings include:
•   Margaret Perrott (daughter of Abel), baptised at Cymyoy, Monmouths 18 June 1747;
•   Abel Perrot (son of Abel Perrot), baptised at Cymyoy 10 Feb 1750/1;
•   Richard Perrot (son of Abel Perrot), baptised at Cymyoy 20 Jan 1753, died at 12 Mar 1753;

My information suggests that father Abel Perrott (son of John and Margaret, baptised at Cymyoy, Monmouths 1 Nov 1717.

Looks like Thomas was alive in 1858, judging by this court battle with Abel
