All I can suggest if his mother was indeed named Sarah is that his parents possibly John Plummer and Sarah Greentree who married 3/5/1795 St. John de Sepulchre, Norwich.   A daughter Mary bp.22/10/1797 Norwich (none of online records show which church but can say it was not one of the 2 churches mentioned here) and then son Henry bp.4/8/1805 St. Peter Parmentergate, Norwich and daughter Jane also baptised there 6/11/1808.

As you can see there is an 8 year gap between Mary 1797 and Henry 1805 and feel sure there were children born in this period which may well have included your John.

This seems to be the most likely couple bearing in mind you say his mother was named Sarah plus there are a number of online trees that state his father was named John.   Unfortunately, there are no online records showing if there were indeed children born to John and Sarah between 1797 and 1805 which seems more than likely.

I see the 1795 Marriage on FreeREG, Bachelor/Spinster.

But this is interesting a Baptism same Church;
PETER Plummer 24 Jan 1796 to PETER/SARAH
Mother Late Sarah Greenthree Spinster
Did the Vicar make a mistake with John/Peter?

Then we have;
HENRY 4 Aug 1805
JANE 6 Nov 1808
Parents JOHN/SARAH nee Greentree

Plummer is quite a common name in Norfolk and John/Sarah are hard to trace.

It is possible JOHN Plummer was buried 18 Dec 1810, St Edmund, Norwich age 36 (1774)
The there is a Sarah PLUMMER/John HILL Marriage 3 Aug 1815, St Giles, Norwich
Both Widowed*

May or may not be your John/Sarah.

Peter married Mary GARNER 15 Jun 1818, St Nicholas, Great Yarmouth
He died 1855
