Abbott Bradstreet

Hi I have been trying to figure this out for years and it doesn't  get any easier.
My Father was Gordon John Bradstreet 1930 London
My Grandfather was George James Bradstreet 1894 London
My GG.father was Walter Bradstreet C1865  Norfolk
My GG G Father was James Abbott Bradstreet 1824 Norfolk
My GG G G Father was William Bradstreet 1796 Norfolk.
Now the problem i have is figuring out about the Abbott. My dad said before he died that he was told their surname used to be Abbott and it was changed to Bradstreet. why would this be? and does it mean im not a true Bradstreet. I don't know how to prove any of this. On one document it says Abbott commonly called Bradstreet. I cant find anyone who has got any further back than me or has figured this out. here's hoping someone can help NetNet

Do you have a baptism for James Abbott Bradstreet. (born 1824)

Which document says  'Abbott commonly called Bradstreet'

The 1793 William Bradstreet - Elizabeth Abbot marriage was by licence (Archdeaconry of Norfolk)

William Brasted the base born son of Elizabeth Abbot
born June the 18th
