We don't know 'which', if any, of the variations was Bridget's maiden name. I suppose the priest was just as likely to mishear as the registrar and make his best guess.

Apologies for this taking so long, but I finally managed to look for the baptism of Peter Coyne today at the LDS FHC
St Joseph RC Church, Birtley, Baptism Register 1856
Born 20th June 1856, baptised 29th June 1856
Peter Coyne son of Thomas and Bridget Coyne, (maiden name Mulhearn)
Godparents Peter Joyce and Anna Joyce

As ever, I ran out of time, but did have a quick look for burials in this parish and wasn't able to see one for Patrick, will try again next time I am there.

I did see a burial for a Joannes (John) Coyne at St Joseph's

Died 4th December 1871 John Coyne of Wrekenton, aged 20½, buried 5th December 1871
