Do you live in Ayr, Scotland or Ayr, Queensland, Australia?  Perhaps you could modify your profile to let people know.  Sometimes where you are can help people answer your queries.

Irish genealogy is notoriously difficult, though from the dates given at least your 'happenings' are since civil registration in Ireland  :)  :)  :)

My birthday is 10th October so it is interesting and exciting to see that Edmond Wilson O担ullivan was born on 10th October.
When the family moved from Dublin to Belfast I believe they dropped the O and were known then as Sullivan.
Would this have been common practice then?

An Edmond Wilson O'Sullivan was baptised in St. Paul's, Dublin, on 27 October 1859 (born 10 October), parents recorded as John & Ellen (Wilson), detail at no. 1847 below:

Certainly not unique, it was a known practice.

(O')Sullivan and Wilson were common surnames, so there is every chance that there were more than one John and Ellen couple, which is why I used the word 'possible' at reply #3.  The same applies here, civil registrations for a Mary born in 1864 and a John Florence in 1866, father described as a merchant / agent living at 75 Talbot Street:
