Definitely a Stratford in Essex!  Home of the Olympic Stadium!

And now West Ham United Football Club's home ground since they moved from The Boleyn Ground at Upton Park!

My Mum's side lived in the area up to the 1930's. Sometimes documents state Stratford, sometimes West Ham, depending on whether it was a Parish Record or District Record.  The Parishes of West Ham & Stratford were right next to each other. Nowadays, the West Ham Parish Church address states Stratford!

Unless a family member trained a relative, all apprenticeships had to be recorded centrally and you might be lucky and find a record of the transaction which records the nature of the apprenticeship, father's name, apprentice's name; and employer's name & town.

That's interesting thank you Rena.  His brother was a boilermaker and pops up in Battersea for one census - again a one off like the one mention of Stratford.  Another brother worked in the GWR and another in the dockyards at Devonport.

Any idea where apprenticeships were recorded?

So he would be out of any formal apprenticeship on his 21st birthday, and free to take the best paid job he could find.

Railway apprentices were not guaranteed a job at the end of their apprenticeship, but the great eastern railway was expanding rapidly at that time under their new chief mechanical engineer,
previously second in command at Swindon for the GWR
