A lot of old 'family Bibles' are very heavy, very large and the print is very, very small and difficult to read so donating such old Bibles to needy Christians overseas is often not a practical option.
Away sorting out DNA matches... I may be gone for some time many years!

Why shouldn't they be binned or burnt?

If I had anything like that and no good home to pass it on to think I would give it to the local charity/2nd hand bookshop so that people like us can rummage through and make a discovery!

More likely to have the purchaser rip out the written on pages of family records, leaving the clean pages to be used to write in a new family record producing a family bible for themselves.[ Hopefully a well researched one]
