I seem to have a hit a brick wall finding out the parents of Nicholas Baldock (alternative spelling Baldocke) born in 1562 in Minster Sheppey, Kent, he died in 1622. He married Agnes Allen in 1587 in Canterbury, they had 7 children Richard, Jane, Nicholas, Petronella, Robert, Anthony and Thomas. If anyone can find anything out be greatly appreciated to enable me to try to move back further. Thank you  :)

It doesn't look as though there are any records online for christenings covering 1562.  For Minster Sheppey they start at 1558.

You may have to visit the Kent Records Office to see any records.

May I ask how you know he was born 1562 Minster Sheppey?
