Welcome to RootsChat.
Not many records survive from the early 1800s
You need to know his religion.
Ideally his parish. Townland would be best.
Have you found any other members of his family in Galway?

Can you identify the entry, 1841 census, where you are seeing Thomas MELVILLE.

Who else in the household?

Catholic Emancipation didn't happen until the 1820s so not many priests kept parish registers before that, also the parishes on the west coast where most emigration was from tend to have the poorest survival rate for registers.

Most of the registers are here https://registers.nli.ie/ but there are a lot of parishes to search when you don't know which he was from.

To try and narrow down the possibilities.
The Tithe Applotment books mainly from the 1820s records people with enough land to pay a tithe so not everyone is recorded.
There is only one result for Melville (it's possible there could be others mis transcribed or mis spelt) in the Civil Parish of Kinvarradoorus.
I'll try to work out which RC parish this Civil parish was in.

Give a man a record and you feed him for a day.
Teach a man to research, and you feed him for a lifetime.

Using the link hallmark posted the panel on the right has a link 6 Church records which leads to the parish
https://registers.nli.ie/parishes/0632
If this is where your family was from the records start too late.

Hello and welcome  :)

I can’t see a Thomas in 1841 - don’t think that would show Galway in that census though
There is only one that would seem to fit in censuses

1851 2408/243/17
Byker, Newcastle

Thomas Melville   40 yrs b Ireland
Mary Melville 30 yrs
Jane Melville 11 yrs
Mary Ann Melville 8 months

Mary Ann b Tynemouth shows mmn Connolly  https://www.gro.gov.uk/gro/content/certificates/default.asp

1861 shows Thomas, 46 yrs (abt 1815)  b Galway
Mary is b Limerick

Is this your family? How is he your great uncle - through Mary?

If it is your family, there is a Jane Melvil baptised 25th September 1839 with parents Thomas and Mary Connolly here - Ardrahan, Galway
https://registers.nli.ie/registers/vtls000634142#page/6/mode/1up

I hope this is helpful and the right family.
