It’s been done: https://www.rootschat.com/forum/index.php?topic=802972.msg6609737 but the middle names may be useful.

John’s father is  likely to be William. If they followed the naming pattern mother should be Henrietta.

Might be John and siblings:

STURROCK Beatrix Brown WILLIAM STURROCK/BEATRIX SCOTT 27-6-1819 282/ 100 327 Dundee

STURROCK John WILLIAM STURROCK/BEATRIX SCOTT 29-5-1825 282/ 150 278 Dundee

STURROCK Henrietta Ross WILLIAM STURROCK/BEATRIX SCOTT 21-10-1827 282/ 160 114 Dundee

STURROCK William WILLIAM STURROCK/BEATRIX SCOTT 9-1-1831 282/ 160 319 Dundee

Wonder if Beatrix is Elizabeth? It would account for the ‘Betsy’ girls on the census and the gap between 1819 and 1825:

Janet is on the 1841: STURROCK JANET WILLM. STURROCK/ELIZTH. SCOTT 26-5-1816 282/ 100 179 Dundee

STURROCK Henry Rose Duncan WILLIAM STURROCK/ELIZABETH SCOTT 18-2-1821 282/ 150 54 Dundee

Henry Rose may be Henry ROSS, mistranscribed.

A Sturrock/Scott marriage: STURROCK William Elizabeth SCOTT/ 12-12-1814 282/ 140 207 Dundee

I believe this may be the family next door to a John and Catherine on the 1861 census.

Of note: 282/2 10/ 40 Dundee Second District Angus

STURROCK William 70
STURROCK Henrietta 33
STURROCK Bettsy 40

1841 282/ 26/ 9 Dundee Angus:

STURROCK William 50

STURROCK Beatrie 50 - I’d guess that this is Beatrix.

STURROCK Janet 28

STURROCK Betsy 20

STURROCK Henritta 13

Death of Beatrix?:

STURROCK Beatrix Brown 69 mmn BROWN 1857 282/2 902 Dundee Second District

William Sturrock seems to also be on the 1871 census

North Lindsay Street

William Sturrock 81 B Liff Cabinetmaker (unemployed)
Daughter Beatrice B is with him, a mantle maker.

I cannot immediately see a death for William with an age matching  those suggested in the censuses.

I cannot see any further records for Beatrix until the 1891 census where she seems to be recorded in Birkenhead, Cheshire. She is showing as aunt in the home of James and Wilhelmina Lamb with again the occupation of mantle maker. She is still with them in 1901, recorded as Betsy . She appears to have died in Birkenhead in 1905.

William
Dent (Haltwhistle and Sacriston), Bell and Jetson (Haltwhistle), Postle, Ward, Longstaff, Purvis, Manners, Parnaby and Hardy (Co. Durham), Kennedy and McRobert (Banffshire), Reid(Bathgate), Watson (Wemyss), Graham (Libberton), Sandilands (Carmichael), Munro (Dingwall)

This 1855 birth for their daughter should provide place of birth and year of birth of both parents ( this information only appears on 1855 births). Certificate can be viewed on Scotlandspeople for a small fee.
Clotworthy, McMahon, Saunderson, Culley (Ireland & Scotland)
Weatherall, Greer (Ireland & Scotland)

Let’s hope the OP purchases John’s death cert.

Will be funny if his folks aren’t William and mmn Scott, but at least we will have provided information for someone’s tree.  ;D
