Not seeing anything for the older William Channer, 15th Hussars. Not indexed in the muster rolls of the period which are on ancestry (1812-1817), may not be complete.
There is a William Channer about in the 23rd Light Dragoons.

An oddity
The baptism before William at Chelsea, same day, 20 March 1814, on previous page
Robert
son of Robert + Jarius Salmon
abode George Street
father a Butcher
born 5 May 1811

Hi
I haven't yet seen a marriage for William.
William in Chatham Street died shortly after the 1871 census. So he must be the June qtr 1871 death in St Saviour, age 57
And was buried at Victoria Park Cemetery, 27 April 1871. Age on that is 50, address is Chatham St Newington.

I honestly don't know if there were two "wives" or just the one, their details don't match from 1861 and 1871, as you have posted.
Hadn't thought about the other William in 1871, I think most likely it is a different man.

Re the 1817 marriage
The relevant St Clement Danes banns register does not give marital status either, so we still don't know if the Chaner lady who married Thomas Castle was a widow.

But that name of his mother, Jarius or Jaryas, etc, is so unusual. Hardly finding anyone else called that. Chaner must surely be a form of Channer (itself not a common name)

However
The previous banns register for St Clement Danes has an earlier entry for
Thomas Smith + Jarry Chaner
banns called 19, 26 November, and 3 December 1815
both of the parish
And it says that they were bachelor and spinster.
BUT - No marriage found!

I think there is something very odd about all this, and don't forget the baptism at Chelsea, on the same day in 1814 as William, of Robert Salmon, mother Jarius, also living in George Street.
Too many coincidences here for me.
John

hi

i was thinking he was at work on census
and wive wife on other census
i will re check any other William`
i have ( before it was on line ) copied every channer record i could find in  BMD books
so i will look  other possibilities  i  have some knowledge of walworth and bermondsey area

i cant find any one who would fit with 2nd census record
strange burial was victoria park  hackney across the river thames
possibly not such a divide as it is now
i think age is 60 not 50 but still a bit out for birth 1814
prehaps another relative was buried there
more research for me

I am researching the Channers at the moment. Frances Dodd was my 6x Great Aunt, through her sister Ann Dodd. Likewise I am just trying to suss out Jarius. I have not thoroughly read this thread yet, so please forgive me if I tell you things you have already posted.
William was one of at least 8 children of James Channer (1752, Ampthill, Beds, son of Matthew Channer and Sarah Dell) and Frances Dodd (09 Mar 1752, Chenies, Bucks daur of John Dodd and Sarah). James Channer is well documented, as he was a supporter of the Duke of Bedford (probably Lord John Russell) who had the manor and palace of Chenies. It is recorded that "his business in Ampthill failed after he injured himself falling from his horse, during the elctions of 1785. The old water mill at Chenies (about 3 miles from where I live) is called Dodd's Mill. George Dodd was a pall bearer at the funeral of Francis Russell, Duke of Bedford's at Chenies in 1802.
I recently found a definite and very strong DNA match with a descendant of William's brother George Channer. George (14 Apr 1779, Ampthill) was recorded as "George Channer of Black River", as he had a plantation at Black River in Jamaica, where he had at least 9 children!
The Channers were very much a military family. George's grandson was General George Nicholas Channer VC CB, who was awarded the VC in 1875 in Perak, Malaya.
The story continues... :)
