This may be a long shot, but a John AUSTIN married Catherine DEAN in Appledore, Kent 9 Sept 1822. There is a John AUSTIN baptised to parents John and Catherine 29 June 1823 at Burmarsh, Kent, and 6 subsequent children all with parents John and Catherine  (Edward has mother as "Catherine Dean [or Dane?] AUSTIN"):

1823  John
1824  Elizabeth
1826 Edward
1827 William
1830 Catherine
1832 Julia
1833 Sophia

I can't see this family in any of the English censuses, so presumably immigrated.

Modified to add Catherine's alternative spelling of her middle name

I think she is the sister-in-law of William Charlton and William Gibb, the complainant and the defendant.

If this is your John AUSTIN, then there is this possibility for his baptism:
25 Nov 1781 at All Saints Burmarsh, parents Edward and Eizabeth.

Possible for Catherine:
1 Nov 1796 at St Peter and Paul Appledore, parents James and Sarah.

All on FreeReg (as is their marriage and the baptism of their children)

A public tree has this marriage as your man and his wife died in 1838 prior to his and the children's departure for Australia.

Have you actually seen the Honduras passenger list? Does it say JOHN, as the newspaper only has J.

What documention do you have that your John is from KENT and where did you find his father’s name as Edward?

If you are considering he is the one who died in Carcoar you may want to investigate this lady:
