I think her name was Peckover.

I have come across this a lot with my other names.

It seems to vary from Peckover as shown for Sarah's illegitimate daughter Hannah shown on the 1851 census but as Pickover on her baptism

Baptism: 14 May 1843 St Bartholomew, Colne, Lancashire, England
Hannah Pickover - [Child] of Sarah Pickover
    Abode: Moss Houses

Most weavers/carters would not have been able to read so the registrar / vicar would have written what he thought he heard

I don't think this is the correct marriage.  Looking at the children's GRO birth registrations it is more likely to be this one:

James Hartley - (X), 49, Weaver, Widower, Bents
Elizabeth Smith - 30, Spinster, Barrowford
    Groom's Father: James Hartley, Weaver
    Bride's Father: William Smith, Farm Labourer
    Witness: Marth Sharp, (X); John Horsfield
    Married by Banns by: G Davidson
    Register: Marriages 1865 - 1870, Page 4, Entry 8

Are we sure that James Hartley the carter was same man as James Hartley the weaver?

All the children were born between c1859 and c1870 in Colne.
Birth registrations of Hartley children in Colne with mother's maiden surname Pickhaver or Pickover were from 1851-1864. Joseph 1851; Nancy 1853; Elizabeth 1856; Stephen 1857; Benjamin 1858; Mary 1861 and Edward 1864. (Lancs. BMD)

Possible death registrations in Colne for Sarah Hartley, taking into account her stated age at marriage and birth of her presumed last child in 1864:
1864 aged 43
1866 aged 41
1876 aged 56
I can't see likely burials for any of them on LAN OPC.
