Is this her death? If so should be on 1939.

the sub registration districts in Wexford are
Enniscorthy, Gorey, New Ross, Shillelagh, Wexford.

Looking just at these sub districts on irishgenealogy.ie 1870 - 1876 gives only one of these [in sub district of New Ross 9 Feb 1872, name Honora, but father Thomas is a farmer]

ADDED: have looked for Agnes in same district with no success 1855 - 1880.

Thomas is still a Farmer on his death

I had a look for Sullivan Publicans in the 1901 Wexford census and found only Patrick Sullivan in Dumnain (New Ross District), along with wife Anastasia and son Thomas, 4 months old. See below:-

Looking for the birth of baby Thomas, I read he's actually called Thomas JOSEPH Sullivan and his mother is listed as Stasia, formerly Hart.  See below:-

Could the recently married Patrick Sullivan have taken over the pub that was mentioned earlier?

A lot of coincidences here.

I had looked at him and wondered about him too.
His father was also Thomas, a farmer.
If I have the right one, there are baptisms for Patrick and siblings in 1860s.

Indeed there are, I did find an archived newspaper article from The Wexford People, 14 March 1891.  It referred to a failed application to transfer a "six day licence" from James Doyle of Dunmain to his brother in law Thomas Sullivan!

So you found a birth record for Patrick. son of Thomas Sullivan whose wife's maiden name was Doyle.

This links Thomas Sullivan, (who was "Deceased" by 1897 re. Norah's wedding certificate) to both the James Doyle as a brother-in-law and to the pub trade and all in County Wexford!!!

I found other newspaper references to James Doyle of Dunmain, serving alcohol on a Sunday was one, but nothing about Thomas Sullivan.

Thank you so much for all your help, now if only the Thomas Sullivan named above had a daughter in or around 1874 even though she may not have been baptised Norah but chose a new first name for her move to England?

Honora and Nora(h) are the same name in Ireland. Interchangeable like Helen & Ellen or Ann & Agnes.

That is the problem at the moment.
There are two Thomas Sullivans, both Farmers.
One has a daughter, Norah in reply #8.
One has a son, Patrick who becomes a Publican.

Heywood is spot on.

I have been in email contact with the Wexford County Library:
(Gráinne Doran, Archivist | Wexford County Archive)

She very kindly did some checking and suggested the same name as already mentioned on here, namely Honora Sullivan born in Old Ross, 15 Feb 1872.

I have just ordered a birth certificate from 'certificates.ie' so fingers crossed.
