I also can’t seem to find any record of a Birth for George Henry Edwards abt 1880 in Tamworth or anywhere around there

I have all the CD's for BDM's in Victoria so don't use any online index.

There was a birth registered in the Armidale district but I've followed that through so not him.  Have you considered that George, if that was his real name, may have already been married to someone else.

George was cremated at Fawkner Memorial Park.

I also saw a possible marriage in SA for an Amy osullivan and a George .
Am just clearly stumped by them

It's quite possible the OP only needs us to help with marriage and/or birth records. 

All sorts of scenarios are possible.  George's birth mother may have remarried and he acquired the new husband's name.  He may not have been born but raised at Tamworth.  Similarly the same may have happened to Amy.
