Shipping crew records

Am searching for records for shipwrights working on vessels.  I have for example, found my German great grandfather (Harold Hanks)  working in Australia between 1891-2 as  an able seaman on various ships.  Do other countries have these type of records?

I have also noted his father on his death certificate was listed as a shipwright.  Any ideas where I can find records?

I have no idea where in Germany Harold or his father  (Harry) HANKS came from or if indeed Hanks was their name.  I have searched HENKS and HANKE with out any luck.
Harold met his future wife in Glasgow Scotland so am assuming he moved to Scotland from Germany between his birth in 1865 and leaving for Australia in 1891.

Any help anyone could pass on would be appreciated.
