Ok - found a match of someone on the 1841 who is still there in 1851 and immediately next to the Lion:

Joseph Jones, Grocer

The next entry on the 1841 is

Elizabeth Hall, 35, Publican

and the other side is

Edward Hughes, 30, Innkeeper

So maybe one of these was the occupant of the Lion.
