Hi
The Burwash connection may be fruitful...
1841
James Gilbert, 30, and family in Burwash, with a William Gilbert, 40
https://www.familysearch.org/ark:/61903/1:1:M7SV-SLM

1851
Still in Burwash...
James Gilbert, 45, born Etchingham
and family
and brother William Gilbert, 58, born Burwash
https://familysearch.org/ark:/61903/1:1:SGJK-LSJ

James, son of William + Elizabeth Gilbert, baptized Etchingham, 11 May 1806
https://www.familysearch.org/ark:/61903/3:1:S3HY-DRZH-WYV?i=265

Yet to find a baptism for brother William in Burwash or Etchingham...

There is a burial of a William Gilbert in Burwash, don't know if it's the right one though.
7 Feb 1831, William Gilbert, age 78, abode Burwash
https://www.familysearch.org/ark:/61903/3:1:S3HY-DR83-2G5?i=483&cat=215229

Now this is interesting from The Keep
From Burwash records
12 Feb 1831, Militia Return
"The name of the householder is given first, followed by the names of the men in the house"
Widow of William Gilbert
William Gilbert (38 years), exempt deaf and blind
James Gilbert (24 years), exempt ‘man serving’
http://www.thekeep.info/collections/getrecord/GB179_P284_23_53

The ages match, so perhaps the William buried just a few days earlier in Burwash might be your man?
John

This is good, another transcript for the Gilberts in Burwash in 1851 to link to, this one from FreeCen.
Will it work though?

James, son of William + Elizabeth Gilbert, baptized Etchingham, 11 May 1806

This James Gilbert is my 3x great-grandfather. His daughter Emily (b. 1853) married my 2x great-grandfather, Charles Funnell.

There is a burial of a William Gilbert in Burwash, don't know if it's the right one though.

This would mean he was born c. 1754, so he could be the illegitimate son of Sarah Gilbert.
