Sparkes from Sunderland England

Could somebody help me. I have been on this site before, but I still cannot find my William Sparkes.
My Great Grandfather was William Sparkes. On his marriage form for 5th of April 1885, his parents were from Sunderland, England and their names were William and Elizabeth.  When he married again on 3 June 1913 his father was William Sparkes, a Soldier. In the 1901 census of Ireland William was aged 42 born, in 1859 and he was from England. In the 1911 Census he was 46, born in 1865 born in England. He died 12 Jan 1931, aged 61 and my Grandfather was present at his death.He was estimated to be born in 1870. Through all of this mess he was William Sparkes, his father was William Sparkes and his mother was Elizabeth Sparkes. He was born in England. His birth dated are between 1859 and 1870. His father was a Soldier.

 In the 1901 census of Ireland William was aged 42 born, in 1859 and he was from England.

Chioce of two - one in Antrim and one in Stradbally

On 1911 Ireland census the Antrim chap has the correct change of age

1901 he was living at 200 Spamount Street Dock Ward Antrim and in 1911 he was living in 20 Burlington Street Dock Ward Antrim. He lived out his life in Belfast. His wife Elizabeth Adair died 13 Nov 1911 and he remarried Elizabeth Otterson on 3 Jan 1913 at St Brigid's RC, Belfast. He lived at 10 Burlington St in 1913.

Sorry to keep asking questions, what was his profession when he married Elizabeth Adair.  Who were the witnesses to the marriage
