Re 1861 census Margaret witter and her sister Sarah are registered as Servant& Nurse. This is a public house, is it possible this was a  private residence in 1861?
I cannot seem to find any history on the building itself. ???

At a guess I would say that Sarah is the house servant to the family and Margaret is the nurse/nanny/mother's help for their young daughter Alice. Head of house is the Innkeeper but it looks like the sisters worked for the family rather than in the pub.

Yes I live just 5 mins from there, went for a wonder round st.cuthbert's church and found some useful graves there
