Walter has been located in both the 1841 and 1851 census,

This document does not appear to have much more information about his service.
 
A copy of a will by Walter has been found amongst some family history documents of his brothers family. The will was signed in Bury St Edmunds 7th March 1879. His brother William and his sister Emily's husband  are the executors.

In the will he declares himself as being Walter CHILDS from Wellington New Zealand , mariner.
He mentions his shares in a silver mine Mount Rangitoto, Westland and the shares being in the hands of Messrs Krull and company.

Are there any records from New Zealand filling in some gaps.

I have not yet identified him on other census entries in England .

Thank you for that background information.
I found an article about the Silver mine, and it seems it wasn't such a profitable seam as expected, well there's a surprise. I wonder if they managed to sell his shares? Not sure when he died yet.

From the University of Canterbury Christchurch
Gold- and silver-bearing veins located in Mine Creek, Mount Rangitoto and Cedar Creek, Mount Greenland have been worked sporadically since 1875, for small returns. The Mine Creek workings (1875 - 1904) yielded unknown but presumably small quantities of silver, and possibly gold, before operations ceased due primarily to poor recovery of the lower than expected silver grades encountered. The Cedar Creek workings yielded some 112kg (3,969oz) of gold from mineralised quartz veins, worked intermittently between 1885 and 1941, before operations finally ceased due to the poor financial position of the last company to work the ground, Mount Greenland Gold Limited, and their purchasing of an over-estimated ore reserve.

Have you looked for evidence that the will was proven?

What was the name of Emily's husband?

The 1890 location in Auckland obviously a good match, and the 1901 death quite likely.
Emily’s husband was Thomas WILKIN.
I suspect the will had been posted to England, it was signed by a. James WEAVERS who was his brother William’s  father in law or could be his brother in law, and a William LONG in Bury St Edmunds. He ties up with being a solicitors clerk in the 1881 census in Bury St Edmunds
This document does imply that the will should have been signed by The two executors, William CHILDS and Emily WILKIN nee CHILDS, there was another sibling alive when he joined the RN, but it looks as if she might have died in 1872, but I would have to re-check that.
Not sure about the will being proven.
This document does not particularly look like a legally binding document, but it does present a lot of facts, that seem to stack up.
If he sent this document to them in 1879, he would have been 41, presumably he had contacted them again in 1886.
