For the time being I would discount the family trees as they can be notoriously inaccurate.
I would do what you're doing now & find the right family for yourself.
Harriet's father is James or Henry & I suppose you'll never really know for sure, however as they were brothers you know they are from the same stock.

What can you tell us about this Thomas?
Was he in the soap business in London?

He was born Thomas James Stevens in 1807 it says Whitechapel or St George’s Hanover sq (think that was baptism) and he was listed as Soap maker or melter or soap melter few different titles it seems his first marriage was to Jane Ann Beaumont (I think) in 1834 and I’m assuming she died because he remarried in 1839 to Elizabeth Mary Potter and he’s listed as a widow.  I think I found at least 11 children but no James or Henry? I’m still digging

2nd. marriage was 1842.
As there were 11 children in total is it possible that James is one of those & is using a middle name & possibly the same for Henry?
It's not that unusual.
