The newspaper report of the wedding to H H Whitworth has Harriet as MRS Harriet Ingleton.
It took place at Newark Registrars office

Possible death as Harriet Towers aged 25, Dec qtr 1874 Caistor.

No age given on transcript.  OP has her born 1840

She's not the 1840 person though, presumably, as you have found her maiden name does not match.

1871 the couple are living in 19 Cawkwells Yard Newark with Henry Bark and his wife Ann  William Ingleton is noted as son in law.With them is George Ingleton grandson 8 months.Ann aged 4.

Mary was with her husband John Bartle in Laxton on the 1861 census. Harriet is with them.

The mother's maiden name for Elizabeth Towers born in Newark in 1875 was Cooling, per GRO Online ???

Perhaps Elizabeth was a daughter of Thomas Towers & Betsy Harding Cooling, marr Sep qtr 1874 Newark?

Said Elizabeth is with her parents Thomas and Betsy Towers at Bayards Leap, Lincolnshire in 1881.

There does not appear to have been any children born to Harriet and Alfred - indeed, if Harriet did indeed die in 1874 age 25?? (wrong age could have been given if she'd lied to Alfred) - she was in fact 7 years older than him.
