Where are you getting the parents names, I did not see them on 1841 census.

What Denomination for John and Katherine?
I can see a burial at St Matthew's (Roman Catholic) at Windsor, New South Wales for a John CHURCHILL a soldier aged 31 years. He was in the 80th Regiment of Foot. He died in the Military Hospital at Windsor. He was died 27 November 1837.

29 rank and file were guards under Captain Furlong and ensign Torkington on the Heber, which sailed from Dublin on 6 March 1837 with 217 male convicts. If your chap was this soldier, I do not anticipate finding his name or his wife's name or their children, actually 'named' on any passenger list. But I do note that the newspaper cutting does show '6 soldiers wives and 6 children'.
