Henry and Edith Hancox 1891 and back

Hi,
looking for some help to find Henry and Edith Hancox.
this is what we believe we have at this point.
Came to Canada in September 1893.
 birth date of Henry as Jan. 20, 1866 in Welford on Avon but can't find his parents.
Edith Lavania Hopkins born Nov 12 1868 to a James and Elizabeth Hopkins
Henry and Edith had their first son born in 1892 before they came to Canada in 1893
Trying to find more about Henry in particularly but also have nothing more on Edith.
Any help would be appreciated!

From marriage and before he was Henry Hancock - married in Welford 30/12/1891, son of Edward Hancock, Labourer.

Henry Hancock bp.25/2/1866 Welford, son of Edward and Ann.

Edward Hancock, son of John Hancock, married Ann Harrison 14/10/1850 St. Mary, Warwick, Warwickshire.

In 1881 family recorded as Hancox but in 1891 (mother Ann now a widow) they are Hancock again!

From the GRO Edith's Mother's maiden name is Saxtree:

Births December quarter 1868 at Pershore  Edith Lavinia Hopkins mmn Saxtree  06C 345

Parents' marriage:
Marriages June quarter 1866 
 James Hopkins        Winchcomb    6a   722   
Elizabeth Saxtree     Winchcomb    6a   722

She can easily be found on Ancestry censuses in 1871 and 1881 with her family, Edith born Elmley Castle, living Kersoe in 1871 and Welford in 1881.

Gloucestershire baptisms has her as Elizabeth Saxtree baptised 14th May 1843 in Willersey, parents William and Elizabeth.

Ancestry has her with parents etc in 1851 (as Saxtes) and a servant in 1861 (as Soxtree).

On 1851 census she has 2 younger brothers, births give mmn as Whatcot and Watcot on GRO.

Family in 1841, all born locally, living in Willersley Evesham, Ancestry has:
William Saxtrce   30
Elisabeth Saxtrce   27
William Saxtrce   1
Mary Saxtrce   1 Mo
also a Mary Watcott, 19, female servant.

William baptised August 31st 1839, parents William and Elizabeth.

William Saxtree and Elizabeth Whatcott married on 22 November 1838 in Willersley, both of full age and bachelor and spinster, fathers William Saxtree and Thomas Whatcott, all labourers.
He signed, she made her mark, as did witness Sophia Whatcott.

Think Chipping Camden is claimed in one of the censuses:
Elizabeth Whatcott baptised 28th July 1811 in Chipping Campden,Gloucester, father Thomas.
Added: think that is 23rd,but debatable,  and mother is Elizabeth

Possible witness to marriage Sophia:
Sophia Watcot baptised 8th June 1817 at Chipping Campden, Gloucester.  Father Thomas Watcot  mother Elizabeth.

Also other siblings in Chipping Camden baptisms, including the Mary in 1841, probably, baptised in 1820 (so she should be more than 19 in 1841).

William Saxtree born 1809/1811 is in lots of trees on Ancestry, married either Elizabeth Whatcott or Elizabeth Mann.

Think this is the mix-up, 2 Elizabeths on same page
