Why do you believe he was probably born 1739?

Have you seen the actual parish records for the children's births?

I can see the following on Durham Records Online (using the free search)
Banns Read (Auckland District) 1758 Richard Smith birthplace this parish
Marriage (Lanchester District) 1758 Richard Smith birthplace Merrington

The site is either pay per view or subscription to see the details of the transcriptions which would give you the name of his spouse.

EDIT
Link to the will of a Richard Smith, gentleman of Merrington, written 1794 and he died in 1797
1796 and will proved 1797
(sorry, I misread it)
mentions a wife called Jane and though I only glanced quickly I can see sons Thomas, John and Richard mentioned.

You can download the will from that link if it looks likely to fit with what you know about the family, looks promising?

'possible' baptism for Richard Smith, father Thomas, at Kirk Merrington
https://www.familysearch.org/ark:/61903/1:1:JWVS-KHS

a birth of 1714 would make him about 44 when he married and 82 when he died.

If the above looks likely, then there is a will for a Thomas Smith of Merrington  who names his son Richard Smith as executor and leaves the bulk of his estate to him
https://www.familysearch.org/ark:/61903/3:1:S3HY-69RQ-C31?cc=2358715

lots of grandchildren named in that will so worth a look and further investigation to see if you can determine if its the right people.

possible baptism of Jane Croudace, father John, Lanchester

which would make her 21 when she married Richard Smith

https://www.familysearch.org/ark:/61903/1:1:J7SV-VXJ
possible baptism of Thomas Croudace , father John, Lanchester
(a Thomas Croudace was an executor for Rchard Smith's will)

a free search on Durham Records Online, shows a birth place of Langley Hall Lanchester for the following  children:
1737   Jane   Croudace, 1739   John   Croudace, 1742 James Croudace, 1746 Thomas Croudace,1749 Eleanor Croudace, 1752 James Croudace, 1757 Robert Croudace

and a will for a John Croudace, yeoman, formerly of Langley in the parish of Lanchester in the county of Durham, late of Iveston (in the parish of Lanchester) in the county of Durham
mentions a wife, Elizabeth, sons Thomas, James and Robert
https://www.familysearch.org/ark:/61903/3:1:S3HY-6S97-Y2?cc=2358715

again, these are just possibles, you'd need to check the info out, but it does look promising

I have done some research into this Richard Smith & family via his will etc and have found that daughters Jane & Margaret possibly married brothers John& William Farrow I found in the 1851 census an Eleanor Smith female unmarried servant birth est 1772 Merrington Durham with William FARROW aged 39 born Middleston est b.1812, Margaret FARROW mother73 est b.1778 merrington. This Margaret is possibly Eleanors sister. So if she hadnt married this rules out my Eleanor Smith father Richard but not the one from Kirk Merrington This Eleanor may have died after this census as cant find her in the 1861. So will have to go back and see if I can find any from Houghton Lee spring where my Eleanor married Thanks Lorraine Rowe
